Can you be more precise? What is slow and choppy? Is it only certain applications? If so, which?
Is it slow to start applications? Or are applications slow once they’ve started up?
What CPU do you have and how much memory?

Looks to me like your video drivers are not working. If I was to bad mouth Ubuntu and Linux it would be the pain in the behind to get the video drivers to work in that operating system. What makes it worse is, good Linux users have a very hard time talking down to us Linux Laymen. Their hind site for us that struggle is not good and that is what ultimately makes Linux so hard of a learning curve. Go to the Ubuntu web site and check into video drivers. My guess is you will need to access the terminal to get these drivers to work right. You will not believe the hoops I had to jump through to finely get mine to work. There is also this third party program you can download that helps as well with the video driver installation. You might get lucky and find someone on here that knows what they really are doing in Linux but I doubt it.
