There are versions of Linux that are made to do this. You should have a Linux live CD and a thumb drive — or if you are working on computers that can boot from a USB thumb drive, you can install the operating system to the thumb drive. I run Damn Small Linux (a 50MB operating system) from my thumb drive and it works great. I save my files right back to the thumb drive.

Check out Puppy Linux. You can even make a multi-session disk with Puppy so that you can write back to the CD.

The latest version of Ubuntu comes on a live CD that can be installed. It runs very fast for a live CD. You can save your files on a thumb drive but it might take some tweaking.

Some of the live CDs have a menu option that saves your settings to the thumb drive when you logoff. See the resources below for more information.

You could also allocate disk space to a linux partition and mount that with your live cd.
